In food production, a stainless component must do more than fit. It has to remain cleanable after machining, tolerate the real product and washdown conditions, and arrive with the documentation needed by the machine builder or food business. A polished-looking part with an undefined material or an inaccessible product trap is still a poor result.

This article gives Danish food-equipment buyers a practical specification for outsourced CNC parts. It covers stainless selection, hygienic geometry, surface requirements, quality records and the route from a first-off sample to recurring batches supplied from Poland.

“Stainless steel” is a starting point, not a complete requirement

Denmark's food authority notes that stainless steel is widely used in food-contact machinery, tanks and equipment, while also requiring metals and alloys not to release substances in harmful amounts. For a CNC supplier, a useful specification therefore describes:

  • direct product contact, splash zone or non-contact machine area,
  • food type, including acidity, salt and fat,
  • process and cleaning temperatures,
  • detergent and disinfectant chemistry,
  • contact duration and cleaning frequency,
  • expected corrosion resistance and service life.

Only then does a grade designation become meaningful. 1.4301 / AISI 304 is common for many general food-machine components in mild conditions. 1.4404 / AISI 316L is often considered for more demanding wet, chloride-bearing or chemically cleaned environments. Neither is “approved” without reference to the application.

Hygienic geometry begins on the drawing

Machining can deliver an accurate part that is still difficult to clean. Hygiene depends on decisions made before the first toolpath:

  • replace sharp internal corners with practical radii,
  • avoid blind pockets and narrow slots that retain product,
  • make horizontal surfaces drain where the assembly permits it,
  • keep product-facing surfaces accessible for cleaning and inspection,
  • specify transitions and edge breaks instead of leaving them implicit,
  • design joints and fastener locations so they do not form uncontrolled gaps.

Danish hygiene guidance identifies smooth, non-absorbent and corrosion-resistant materials such as stainless steel as suitable equipment materials. Cleanability, however, is a property of the finished surface and geometry together. It cannot be purchased with a material name alone.

Specify surface finish by function

A statement such as “polished” is hard to quote and harder to inspect. A better drawing identifies the functional surfaces and gives a measurable requirement where necessary. Depending on the component, this may cover:

  • maximum Ra on a defined product-contact face,
  • machining direction or the removal of visible tool marks,
  • deburring and edge condition,
  • grinding or polishing scope,
  • pickling, passivation or electropolishing after machining,
  • protection from carbon-steel contamination during handling.

Do not apply the tightest roughness to every surface by default. A bearing seat, a food-contact face and a hidden external bracket have different functions. Marking only the critical areas lowers processing and inspection cost while keeping the hygienic requirement clear.

Post-machining treatment should also be agreed, not assumed. EHEDG explains that chemical treatments such as pickling, passivation and electropolishing can support the corrosion-resistant performance of stainless surfaces. Typical CNC parts for Danish food machinery

Both new equipment and existing production lines create recurring demand for precisely machined items:

  • shafts, rollers, sleeves and bushes for filling or packaging machines,
  • guide rails, wear parts and conveyor hardware,
  • format-change plates, spacers and positioning components,
  • dosing, cutting and sealing-tool components,
  • flanges, adapters, manifolds and sensor holders,
  • replacement parts for equipment with long OEM lead times,
  • jigs and fixtures used during assembly, cleaning or inspection.

Documentation is part of hygienic risk control

For materials and articles intended to contact food, the European framework includes Regulation (EC) No 1935/2004 and good manufacturing practice under Regulation (EC) No 2023/2006. The European Commission summarises the framework on its food-contact materials page.

The exact document pack for a machined component depends on its role, but it should be settled in the purchase specification. Common items include:

  • material certificate and required certificate level,
  • heat or batch traceability,
  • approved drawing number and revision,
  • inspection results for critical dimensions,
  • surface-treatment or finish confirmation,
  • food-contact compliance information appropriate to the intended use.

The supplier can provide evidence about material and manufacturing. The machine builder or food business must still confirm that the completed equipment and its actual operating conditions are suitable. Clear division of responsibility prevents both gaps and unrealistic requests.

Qualify the process before ordering the full series

For a new supplier or critical component, start with a controlled trial batch. One or several parts can establish whether the machining strategy, surface, documentation and measurement method meet the drawing. The buyer then approves physical evidence rather than a promise.

After approval, the production package should retain:

  • the accepted drawing revision,
  • CNC programs and tool data,
  • fixture or jaw arrangement,
  • agreed inspection plan,
  • packaging and marking requirements.

This makes recurring serial CNC production more predictable and reduces the risk of small undocumented changes between orders.

What to include in an RFQ from Denmark

Send the following wherever available:

  • STEP model and dimensioned PDF drawing,
  • material grade or full operating conditions for selection,
  • quantity for the trial and regular batch,
  • annual forecast or expected call-off frequency,
  • critical tolerances, fits and datums,
  • surface finish and post-treatment requirements,
  • product-contact zone and cleaning method,
  • certificates, traceability and inspection scope,
  • destination and requested delivery date.

Is AISI 304 or AISI 316L automatically approved for food contact in Denmark?

No stainless grade is a universal approval for every application. The responsible business must verify suitability for the intended food, temperature, contact time and cleaning process. 1.4301 (304) and 1.4404 (316L) are common starting points, not substitutes for an application specification.

Does a low Ra value make a CNC part hygienic?

Surface roughness matters, but Ra alone is not enough. Cleanability also depends on radii, drainage, accessible surfaces, transitions, joints and the absence of pockets where product or wash water can remain.

Can the first parts be supplied with an inspection report?
